MIDI Instrument control is located under Selectivity window. This tool allows selecting MIDI instrument to be used when playing and saving MIDI file. You can choose it in two ways. The first way is to select instrument from drop-down list and another is to press "..." button on the right
and choose it in General MIDI Instruments dialog.
